The classic French style roast is a robust and exceptionally dark roast. The beans are roasted well past the second crack and the integrity of the coffee has broken down enough that oils present in all coffees more readily work their way to the surface of the beans, giving them a distinctive sheen.

When Marcel and I partnered to revisit the blend he's using at Mille we resolved to take a similar if not so dramatic approach. This blend of South and Central American coffees mixes a bit of the old and a bit of the new, with the Peruvian component being taken just into second crack and providing much of the heft of this blend. Meanwhile the Colombian is a more balanced, medium level roast, adding depth and nuance. The result is smooth, strong and delightful. This coffee works great as a dark roast drip or espresso. As with most dark roast coffees, higher ratios of coffee to water yeild smoother results.
